Apple Pie~



Introdution:

After baking the Curry Chicken Pie, the next day. My sifu(wilson's mother) said to me, "hey.. we have a lot of apple, you can try bake Apple Pie if you want" ALRIGHT lets try.. beside all ingredient is here, even the cinnamon powder; Which chinese called " Rou Kui Fen" weird.. does it made from meat?

Ingredient: 9'' Pie
500g     Apples(slices)
100g     Sugar
1/2 tsp  Cinnamon
20g       Butter
10g       Corn Flour

Method: (well others don't cook it for a while, but I do)
1. Melt the butter in pan, very small little flame, throw in the apples
2. Pour in the sugar,cinnamon and stir until the sugar melts
3. Pour in flour to thicken it and leave it aside for Filling with Pie(see other link)

Curry Chicken Pie Filling



My God mother taught me new recipe!! She said to me, if you learn this, you will able to do much more with this basic foundation with you. I actually thought of baking Apple Pie, but she and I have the same ideas of it, for being too sweet for us.( I don't like sweet) so she suggested "Curry Chicken Pie Filling" instead. ^^ Good idea, why not? lets try Malaysian Style haha

Ingredients:

450g   Chicken 
500g   Potatoes
200g   Big Onion
30g     Small Onion
50g     Garlic
100g   Chilly Boh
50g     Curry Powder
50g     Ginger
150g   Oil
10g     Salt
5g       Ajinomoto(MSG)
Optional: Curry Leave

method:
1. Heat the oil in a wok, add garlic and onions and fry till golden brown
2. Add curry powder, stir for a while before adding chilly boh, chicken, and the rest ingredients.
3.Fry for 5-8min, add potatoes and cook till the ingredients are evenly distributed and flavored

Pie Dough

Ingredient:
600g High Protein Flour
600g Superfine Flour
760g Shortening
20g   Salt
36g   Sugar
380g Cold Water
Total: 2396g (can divide into half of all its ingredient)

Method:
1. Sieve flour on the table
2. Add in shortening and use dough cutter to cut shortening and flour til rice size
3. Slowly add in cold water and mixed
4. Knead dough until smooth and rest for 20mins or in fridge
5. Place it in between 2 pieces of plastic and roll it out to a thickness of 3mm
6. Remove the top plastic sheet and place the dough over a well greased pie tray
7. Scoop filling into the pie dough and egg yolk wash the edges
8. Roll out another think sheet of dough to cover the top of the pie. Scrap off excess dough from the edge and prick the top with fork to allow steam to escape during baking. Wash with yolk for beauty
9. Using a fork press the dough together at the edge.
10. Egg wash and bake at 200'C for 15-20mins
