Korean Jja Jang Noddle~~ yummy

                                                       JjaJang Mee with Soba noodle


I love to try and have a taste with JjaJang mee for such a long time. But In Malaysia is Super-rare and don tell me Station 1 got serve, because I don't like StationOne at all. My friend found this youtube video and he let me try it. I actually likes it. So I decide to cook my own.

Ingredient:
(well this lady use the amount of ingredient was not accurate at all, haha she goes by feeling so I also can't really measure it. So i also goes by feeling on this site)

2 big Tbsp         Black Bean Paste (Korean)
200g                  Pork in cube
2tbsp                 Sugar
2tbsp                 Potato Starch
few drops          Sesame Oil

Vegetables: -  All cut into cubes shape- 
1/2cups     Raddish
1cups        Sweet Potato
1/2cups     Zucchini
1               Big Onion


  • Heat the pan in medium heat and pour olive oils, fry the pork until crispy(10min)
  • Drain Excess oil, add olive oil to it and pour all vegetables in and stir fried it 
  • Pour water just about cover all ingredient, Let it slimmer and close with lit
  • Separated pan:   Pour olive oil and fried the black bean paste just 1 minutes, drain excess oil
  • Pour the fried BB paste into the simmering cooked veges
  • pour in (2 tbsp potato starch in 4 tbsp water)
  • put sugar in and let it boil a bit and seasoning it with sesame oil
  • Serve with Kimchi cucumber or kimchi cucumber

A simple butter cookie


A simple taste yet really nice, my mission of butter cookie is to bake as good as the expensive blue tin butter cookies, which I don really remember the name,brand or company, just recognize the blue tin. I haven't got the best one yet, but this is reliable

Ingredient:

175g    Unsalted Butter/margarine
90g      Golden Caster Sugar
250g    Plain Flour
optional: Demerara(Raw) sugar for coating


  • Beat butter and sugar until light and fluffy
  • Add flour and beat until mixture foams a smooth dough
  • Roll as in sausage, cylinder or any shape 
  • sprinkle above or coat all around it with demerara sugar 
  • wrap it with plastic wrap and chill for 30minutes or next day
  • cut it into thick slices and place on baking sheet
  • bake it at 160'C for 20minutes
  • Let it cool and it will harden eventually

Who said flour is flour?



Flour

Most cookies recipes use plain(all purpose) flour, it has low gluten content, resulting in a crumbly texture. 
The grains are processed with chlorine to make the flour whiter(It is unhealthy, no good). You can buy unbleached flour, which has a greyish colour. All flour must be sift before use, for better result.

Self-Raising flour
  •  This flour contains raising agents that make cookies spread and rise, giving them a lighter texture.
  • if you run out of self-raising flour, you can substitute plain flour, adding 5ml/1 tsp baking powder to each 115g/1 cup of plain flour. 
  • SRF should not be kept for longer than 3 months because raising agents gradually deteriorate.
Wholemeal Flour
  •  Milled from the entire wheat kernel and contains all the nutrients and flavour of wheat. It is coarser than white flour, giving heavier result. It absorbs liquid than white flour so recipes should be adjusted if wholemeal flour is used.
  • Brown (wheatmeal) flour contains only 80-90% of the bran and wheat germ and has finer texture and milder taste
Non-wheat flours

Potato flour/starch
  • This fine powder is made from potato starch and can be mixed with wheat flour to give a lighter texture to cookies
Chestnut Flour
  • This light brown nutty flavoured flour is made from ground chestnuts and is often sold in italian delicatessens 
Cornmeal
  • also known as polenta or maizemeal,this is bright yellow and coarse or medium ground
Cornflour/cornstarch
  • This fine white powder is made from the middle of the maize kernel. It is often used in piped cookie mixtures to give a smooth texture.
Soya flour

  • Made from soya beans, this has a distinctive nutty flavour. It has a high protein content. Medium- and low-fat varieties are available
Rice Flour
  • This is made by finely grinding polished white rice and it used in many cookie recipes, to give a short, slightly crumbly texture. 
Gluten-Free Baking

Some people are allergic or intolerant to the protein gluten, which found in wheat and rye. Specially produced gluten-free and wheat-free flour mixtures can be used for baking, as can any of the naturally gluten-free flours such as cornmeal, potato flour, rice flour and soya flour.

Cookies Knowledge? [Butter,Sugar and other sweetener]


Butter

Unsalted (sweet) butter is best for making cookies
  •  It has a sweet, slightly nutty taste and firm texture 

Temperature of Butter

  • For rubbed in cookies, butter should be cold and firm but not to hard                                                  (Take it out of refrigerator 5 minutes before using.)

  • To cream butter, it should be in room temperature if you forget to take it out from refrigerator in advance, you can microwave it low power for 10-15sec

  • If using butter to brush baking tin(pans) or sheet. Use unsalted butter rather than salted, which tends to burn and stick

Storing Butter

Butter should be stored in the refrigerator or freezer.
It can absorb other flavour easily so protect it by wrapping

Salted butter can be stored in the refrigerator for about a month
Unsalted butter should be used within 2 weeks.
But all butter frozen in freezer can last up to 6 months

Other Fats

Margarine
  • -This won't produce same flavour as butter but it is less expensive and can be use in same way
  • -Block margarine are better for cookie-making
  • -Soft margarine are better for creaming

White Cooking Fats(Shortening?)
  • Made from blended vegetable oils or a mixture of vegetable and animal or fish oils. White fats are flavourless and create light, short-textured cookies. They work well in highly flavoured cookies, in which you won't taste the butter. Lard is an opague white fat made from rendered pork fat and features in some traditional cookie recipes. 

Oil
  • This may sometimes be used instead of solid fat. Sunflower and safflower oils are preferable as they are light in colour with a mild taste. Olive oils has a distinctive flavour but may be added to savoury crackers

Sugar
 There are many different types of sugar, all of which add their own distinctive character to cookies

Refined Sugars
  • Produced from sugar cane and sugar beet, refined white sugar is 99.9% pure sucrose
Castor/superfine sugar

  • This is the most frequently used sugar for cooking-making. It has a fine grain so is ideal for creaming with butter. It is also used for melted mixtures, meringue toppings and sprinkling over freshly baked cookies.
Icing/confectioners' sugar

  • This is fine, powdery sugar is used to make smooth icings and fillings and for dusting. It may also be added to some piped mixture
Soft Brown Sugar
  • This is refined white sugar that has been tossed in molasses or syrup to colour and flavour it; the darker the colour, the more intense the flavour. It makes moister cookies than white sugar, so never substitute one for the other.
Unrefined Sugars
  • Derived from raw sugar cane, these retain some molasses. They often have a more intense flavour but tend to be less sweet than refined sugars
Golden caster/superfine sugar/ Granulated sugar
  • These are pale gold and are used in the same way as their white counterparts.
Demerara/raw sugar
  • This rich golden sugar has a slight toffee flavour. the grains are large so it is only used in cookie doughs if a crunchy texture is required. it is good for sprinkling over cookies before they are baked.
Muscovado/molasses sugar
  • This fine-textured, moist soft brown sugar may has a treacly flavour.
Storing Sugar
  • Sugar should always be stored in airtight container. 
  • If white sugar forms clumps, break it up with finger
  • if brown sugar dries out and hardens, warm it in the microwave for 1 minutes
Other Sweeteners

Golden/light corn syrup
  • Slightly less sweet than sugar, this produces moist, sticky cookies and it often used in no-bake recipes
Maple syrup
  • Thinner than golden syrup, this has a distinctive flavour.
Honey
  • Use blended honey in cookie doughs as the flavour of milder honeys will be lost.
Malt Extract
  • This concentrated extract made from barley has a distinctive flavour, thick consistency and dark, almost black in colour
Molasses
  • A by-product of sugar refining, molasses looks like malt extract but has a slightly bitter taste.

    Banana Cake


    Even though banana cake is low cost and easy to find anywhere in shop. But Still I must know how to bake this, I tried one recipe before this, it was sucked haha, no ideas who wrote it. From the Blue Ribbon Aussie recipe book, I found this perfect(for me) banana. I lovin't it.

    Ingredient:
    125g               Butter
    3/4 Cup          Sugar (165g)
    2                     Eggs
    3                     Big Banana(ripped and smashed)
    1tsp                Bicarbonate Soda
    2tbsp              Milk
    1 1/2Cups       Self-Raising Flour
    Optional:         Glyerine

    Method:
    1. Beat Butter and sugar until it dissolve in butter
    2. Add egg one at a time,when beat well. Stir in banana
    3. Add Flour, separate into 2 portion
    4. Dislove soda and (glyerine)in milk and pour it in
    5. Bake at 180'C for 1 hours; or until brown and springy when touch

    Sweet Bun for my sweet ^^



    Story:
    haha.. I always wanted to try bake bread, I knew how to bake cakes,pie and other minor thingy. But bread? I still have no ideas, out of the many kinds of breads, I wanted try croissant but...... it is too difficult to try it now, ingredient is hard to find in Australia, especially the small town i stay. Second choice is the sweet bun, I tried it yesterday, it turn out not bad, just a little hard(over bake, my dad ask me to calculate bills, by the time i realize is a bit over, but still good) Today I did a lot of improvement ^^ I love it; just the sausage make it sucky a bit haha

    When I was still at middle school, I used to day dream, my mother will bake me sausage bun for me to take to school, but chances never came, we were poor once. Oven and learning is costly. So my dream come true by friends and family who encourage me today. Everything I do and learn is from others person than myself

    Ps: choose the right sausage for the right bun ^^ and I don't create this recipe, I took it from internet; please refer to the owner I just edited a bit for my own personal taste


    Ingredient:
    150g Self Raising Flour  (300plain flour + 1 3/4 tsp Baking powder)
    150g Plain Flour
    5g     Active Dry Yeast
    3g     Salt
    125g Milk
    1       Eggs
    60g   Castor Sugar
    50g   Butter
    (Eggs for glazing when bake)

    1. Mix all dry ingredients in a mixing bowl. Add in milk, egg and butter. Mix into doughy(hand)
        Place the dough on a lightly floured work surface. Knead the dough until the gluten developed,
        keep kneading for 20mins. Even it is sticky, just keep twisting and kneading making sure all mix well.
    2. Place the kneaded dough in the bowl and cover it when dam towel or plastic wrap, this help to
        seal the moisture. Allow to dough to ferment. Will double it size in 1 hour
    3. Take out the dough and punch out the air produced. Let it rest again for 15min
    4. Dive the dough in your way, usually 60g a portion. Shape and filling with desire, place on the greased or
        line pan and let it proof again for 30min-45min before into the oven
    5. Brush eggs oven the top and oven it for 190'C for 15mins.
    6. Done and let it cool down and put into your mouth! haha

    MT Benson's Wehls


    Finally able to head to the farm after saying it for 3 weeks with valerie, always buzzing her “hey.. Tmr going farm? When U going farm?”



    I wanna go farm so much because I thought to myself, since I ready to stay her permenantly, I sure treasure each moment and oppurtunity that God given to me. I wanna learn about their life and understand the farm in Aussie better. And I always wanted to take some good photo, I really think farm is a great place to practice. Today Caleb,Valerie, Amy and I are had one of best time ever in farm, farm is a beautful country lifestyle. Peter wehls the farm owner also a friend are so kind to show us around his place with a lots of  moment to appreciate. The wehls family are one of the most beautiful family in Robe I met. Along with Jessie and Leia, I forget the brother name.... nevermind I will ask again



    Firstly, we have a “Road Block” of sheep haha. Nice sheeps, smelly and a lot of shit haha. They were herding it to elsewhere and was on the road when we passed by, they so afraid of humans and keep running away from crowds haha, cute. Ka wa ii~





    Peter first show us around the house and the trees around them, don think the trees is a common trees, there orange and this and that, Peter knowns each kind of them.  Peter peel an orange for us haha, go for a walk in the vineyard and have a visit ANDY!! The grumpy old sheep haha. There 3 of them, not sure which is andy, oh well, moving on.


    Second is dragon hunting in farm!! ^^ Peter and jessie told us, quite common we will meet a Beaker Dragon. So begin the hunting!! Whoah~ Jessie found one not even 10 minutes haha, such a great spotter she is. I can’t even see with the comouflage with the dragon have, and it is sun bathing and we disturb it by carrying it around, it just lay lazy, very OZ kind of life haha. Amazing how wild but very tame kind of lizard, doesn’t defent itself or runaway. We carry it around and taking sweet photos even kiss it haha. And back it goes to the spot we found it. We love animals~ Everything included.


    Guess what next? Australia MUST DO. THAT RIGHTS! KANGAROOS~~ Wild kangaroos hunting, we hop on in peters jeeps and with some beers and goes kangaroo spotting! It is wild, the kangaroos will just come into the farm and have rest. For 30minutes drive we spotted quite a few, I was careful not to scare them off, while trying to snap some photos, but I just too afraid to scare them off, so I kept my distance.
    Today is a great day, Really enjoyed every moment when peter show us around. I love the farm, I really respect it a lot, wasn’t easy to run a country farm. I really love today ^^ makes my mood gooood~~~

    Cinnamon Scrolls (Aust)



    Valarie and I met in Robe, she works for my Dad at the restaurant. So nice I met one person who loves to bake, she is also a History and Arts graduate. I'm glad that she share her skill in decorating and design cake. We learned this recipe together :)

    Ingredients:
    250g  Self-Raising Flour
    90g Butter,chopped
    170ml Milk
    Pinch of salt

    Filling:
    60g Butter
    2 tbsp brown sugar
    1 tsp Cinnamon Powder

    Icing:
    125g icing sugar
    1 tbsp boiling water

    Method:
    1. Preheat the oven first for 210'C
    2. Sift flour,salt and butter into the mixing bowl, using your finger to rub the butter into the flour
        By making a well in the center and add almost all the milk. and use hand to knead into dough
    3. Knead the dough into a flat on the "light floured surface" Roll out about 25X40cm rectangle of 5mm thickness
    4. Make the filling just put all ingredient into a electric mixer until well mix and spread it above the flat dough
    5. Roll the dough into a spiral and cut it about 3cm pieces, put in on oven for 12minutes/until golden brown
    6.(icing) combine the icing and boiling water. Beat the mixture until smooth[Spread it on top of baked dough and let it cool]

    Tips 1: spread some egg yolk before baking for extra golden brown
    Tips 2: Option for Icing, just sprinkle it haha.

    Leaving with hardship; Farewell~

     The more I say " Goodbyes" the more I think about how we met and more I missing it. Wasn't easy to say goodbye at all. Sometimes I thinking should I leaving without saying "goodbyes" but I think still the best for me to do it, even if others don't bother about it :) I still must say my part

    I wanna thanks to Wilson and his family, especially. I wouldn't make it today, without your blessing and support to me all this 2 years. I may not say it with words, but I always treat you all like my family. I sure I bring you guys awkward moments, I really wanna apologize for that. Please forgive me for all the silly things, and mistake I did at your home. I glad to call you all my family :) Leaving you guys also is a burden..
     To God-mother and Dad, Thanks for caring me like your own son, especially teach me to bake and cook better.
    To God-brother Edmund and Yong; Sorry for not keeping my promise, to teach piano and bring you both to gym, love you two.
    To Little Ruby; ^^ please don be naughty at home, when you grow up please know that mother and father and your brother is love you, when you grow up, I gonna tell you all the naughty things you did haha.
    To Wilson: I can never have a better buddy than you are, sorry I scold you, nag you, teach you, rude to you. but please know of all I do, because I love you bro.. please do fulfil your promise to come to Australia!


    I really feel blessed, They all touched my heard to the very deep. Have me for a nice dinner with farewell gifts, I felt so touched, I wanna say thank you but I am too afraid to say it out, I will cry. I wanna hug them and afraid I will give them awkward moment. I am glad to know that I have a lot of greats friends, the simple things that they did, always gonna touch me again. A friends can drive all the way just to say Goodbye and with a simple farewell gifts. Simple farewell lunch. And other simple things. But simple things makes me glads ^^

    Chocolate Semi-Freddo

    Introduction:
    My God-brother Edmund was asking me to try make this interesting ingredient from the recipe books I have. So I on my search for this particular cheese know as "Mascarpone" familiar name but never eat,seen or tried it before. So I asked a baker which I always visit her shop, to check also if she sell it. She told me she never sell it because of the quick expiry date and expensive, 250g will cost about Rm25. And after long time of give up finding it ever since the Rm25 for 250g. And came I saw it sell at Tesco, so I took a deep breath and just get it and thinking of cry later if i failed; but It didn't ^^

    ps: I accidental deleted the photo, it look likes normal ice-cream but taste darn nice.

    Ingredients
    250g      Mascarpone Cheese
    2Tbsp    Brandy
    2 Tbsp   Fine Ground Espresso Coffee
    25g        Icing sugar
    75g        Bitter/Plain Chocolate,grated
    5tbsp     Single Cream
    300ml    Double Cream

    To Decorate:
    Coffee liqueur(optional)
    Lightly Whipped Cream

    method:
    1. Beat the ingredient(Mascarpone,brandy,coffee,icing sugar,chocolate and single cream)  in a cake mixer,
       Until well mixed.
    2. In a separated process, beat the double cream with hands until have stiff peak.
    3. Mix both together with a spatula, stir gently for ingredient to mix well, keep in freezer for overnight(more than 3 hours)

    Without Ice-cream making technique

    • Keep in freezer, whisk it again for every 20min, from whisk to spatula. Until it is well mixed.

    Simple Recipe: Chocolate Truffles


    I did this when a I free at night for some reason haha. Not hard to make at all and it taste good, if too much cocoa powder it will taste bitter. So I either coat lesser or substitute with milo powder

    Ingredients:
    225g Bittersweet/good plain chocolate(cooking choco)
    6tbsp Double Cream (whipping cream)
    Nuts (optional-never tried)
    Cocoa Powder/milo

    Method:
    1. Cut the chocolate into smaller piece for easier to melt in double boiler
    2. When chocolate melted, put cream and stir and leave it to cool at refrigerator
         For 30min-45min(Harden to shape it)
    3. Shape into teaspoons size than coat with cocoa powder
    4. Leave inside refrigerator again before serve

    Apple Pie~



    Introdution:

    After baking the Curry Chicken Pie, the next day. My sifu(wilson's mother) said to me, "hey.. we have a lot of apple, you can try bake Apple Pie if you want" ALRIGHT lets try.. beside all ingredient is here, even the cinnamon powder; Which chinese called " Rou Kui Fen" weird.. does it made from meat?

    Ingredient: 9'' Pie
    500g     Apples(slices)
    100g     Sugar
    1/2 tsp  Cinnamon
    20g       Butter
    10g       Corn Flour

    Method: (well others don't cook it for a while, but I do)
    1. Melt the butter in pan, very small little flame, throw in the apples
    2. Pour in the sugar,cinnamon and stir until the sugar melts
    3. Pour in flour to thicken it and leave it aside for Filling with Pie(see other link)

    Mr Sunshine 2010

    I was vain enough to enter into the Mr.Sunshine Search 2010 at KlangParade. I won't enter alone was being push by few friends and the thought keep coming me.. to try just for fun. Why not? just for fun, I not gonna compete to win, I can try but I just wanna had a good time. How it started in my heads is a the sponsor from Glenn Davis saw me helping in an event as photographer. He then just asked me," hey you wanna join for Mr.sunshine?" 

    Cutting the story short. YES I AM IN! I was a bit of regret thought about the experience, but hey.."Bad Experience Is A Good Experience" I did learn something from a cost haha. I did come with a speeches with my heard, and learn a song for the talent show. But... I cannot say this is a best event, it wasn't so organize and no efficiency, I don't to commend much about it, I help Klang Parade organize a couples of event before i know. But what I wanted to comment is.. the PA system. One word... sucky... the mid stand cannot even hold it properly. I was singing.. the mic is dropping further down and down.. it make me out of focus and nervous.

    Before the event started, we got our sponsored shirts(I got to wear Black shirt with short jeans).We got hairstylist, they are indeed expert. I love the hair they styled for me. We also had last minute catwalk choreography by Malaysian model KS Tan. who taught us walk a few rounds, gosh he was serious and never smile at all. There are 16 contestant in total. I am contestant number 9. First round is to "Introduction self and answer why you are qualify for Mr.Sunshine" but the host didn't tell us, so most of us lost 30marks.

    Everyone did well on stage except me, but my friends still support me all the way, I didn't drop down and cry, but it makes me gain something from bad. I learn something, I glad I had it coming. I met a lot of people from there, gain a couples of facebook friends. Well it is just a another for me.

    Curry Chicken Pie Filling



    My God mother taught me new recipe!! She said to me, if you learn this, you will able to do much more with this basic foundation with you. I actually thought of baking Apple Pie, but she and I have the same ideas of it, for being too sweet for us.( I don't like sweet) so she suggested "Curry Chicken Pie Filling" instead. ^^ Good idea, why not? lets try Malaysian Style haha

    Ingredients:

    450g   Chicken 
    500g   Potatoes
    200g   Big Onion
    30g     Small Onion
    50g     Garlic
    100g   Chilly Boh
    50g     Curry Powder
    50g     Ginger
    150g   Oil
    10g     Salt
    5g       Ajinomoto(MSG)
    Optional: Curry Leave

    method:
    1. Heat the oil in a wok, add garlic and onions and fry till golden brown
    2. Add curry powder, stir for a while before adding chilly boh, chicken, and the rest ingredients.
    3.Fry for 5-8min, add potatoes and cook till the ingredients are evenly distributed and flavored

    Pie Dough

    Ingredient:
    600g High Protein Flour
    600g Superfine Flour
    760g Shortening
    20g   Salt
    36g   Sugar
    380g Cold Water
    Total: 2396g (can divide into half of all its ingredient)

    Method:
    1. Sieve flour on the table
    2. Add in shortening and use dough cutter to cut shortening and flour til rice size
    3. Slowly add in cold water and mixed
    4. Knead dough until smooth and rest for 20mins or in fridge
    5. Place it in between 2 pieces of plastic and roll it out to a thickness of 3mm
    6. Remove the top plastic sheet and place the dough over a well greased pie tray
    7. Scoop filling into the pie dough and egg yolk wash the edges
    8. Roll out another think sheet of dough to cover the top of the pie. Scrap off excess dough from the edge and prick the top with fork to allow steam to escape during baking. Wash with yolk for beauty
    9. Using a fork press the dough together at the edge.
    10. Egg wash and bake at 200'C for 15-20mins

    First Facial...Fainted


    After having 3 sleepless night, My face look dull,dry,old,wrinkles, and lost its shine. My eye swollen, the egg bag you can almost see it's creepy purples vain around. I turned into a old caveman. So I ask my friends about how facial was like, they just tell me with very simple explanation, "Pain when the squeeze the pimples out" so i was like," Oh"

    Feeling no direction, I book the time in Herbaline at CentroKlang with my secondary friends who working there. A quick chat with her and she suggested I should take Package Rm88 + Rm32(eye treatment), so I took it, a quick cup of tea, provided by the hospitality services. I gonna tell you guys the step in details and how i felt along the way.
    First Step: Curious with impression
    Walking in the beautiful hall way with amazing architectural designed; into a room to wash my leg with Sea Salt, given a brush to brush my smelly feet and romantic candles lights around. My feeling is," Hey this is better than I thought, nice place and nice service"

    Second Step: Impression with wonders
    Dried my leg, walked into a pillar, to take 3 inhale and exhale from a herbal aroma therapy. Which said to help me relax my mind. My feeling," Sure... why not, I come here for some time to relax and pamper myself ^^"

    Third Step: Getting excited
    Walking into a small room, it was like wow, I have my own private room to keep my stuff. First thing the lady asked me to do is change into their singlet, I was like," okay...." Then I did, A green sexy singlet, to bad I don't have camera with me. Then she asked me to lie down, start to give me some facial massages, and It feels good~~

    Fourth step: Getting started
    After applying some unknown cream, the lady used the machine to cleansed my face from dead cell skin I think. The sound from the tools she used to scratch off my dead skin, it is very sharp, It felt like dentist digging into my ear drum. Then cream my face again with other many cream unknown to me.

    Fifth Step: "Thousand Needles"
    This is the part that I really wanna express! I can't believe I am going through it~ The lady apply some cream on my face than use a lights to brightly shine my face, even with my eye blocked with napkins, but i still can see the lights. After a while, the lady start poking between my eyes, It was painful, but endurable, then forehead, poke.. poke.., squeeze.. squeeze.. Especially when I have phobia of needles. The pain kills me physically and mentally. But I can hold it... The process went from forehead to side faces, was worse.. It keep on poking and poking.. the needles was sooo darn painful! And the other side of face.... under my mouth and THEN........The Worse Nightmare begins only now...... the NOSE............. My conscious," Hell! NO! not the NOSE!" The lady told me to get prepare, and..

    Nose only: (conscious speaking)
    First poke: Ouch...
    no 10: .................
    no 25:......someone... please help me.....
    no.40:.....God?... Please make it stop....I cannot take it anymore...
    no.60:..Damn IT!!!!!!
    no.70....How did Woman endure this!? Tell me HOW!?
    no.75:...(lady?.....can u stop that? Can I quit?.. Can I say no?)
    no.80: Oh damn..oh damn... Oh DAMN!!!
    no.90: Please....... I really cannot take it.....anymore........
    no.100: I am sooo REGRET!!

    no.120: it is finished.....................(I wish I can say," I am numb d..." but it was not"


    Overall it is good to try... but I still cannot solve the mystery of  "Woman The Queen Of Pain" on the process of Thousand Needles. Did you know: The thousand needles process wasn't at once, but ONE BY ONE. you all go home and imagine. But after the process, of course they give me some treatment and gentle massage on my face to comfort me..... TT It works, I really need it. Next time will I go again? Probably haha

    Finish Diploma!!

    Finally the time comes, I thought It will never reached here, because it is just to long. Studying a course and stay in a college with no windows for 3 years... wow.. I made it out haha. I came into here at July 2007, and now I finished it at July 2010, total 3 years rather than 2.5 years. Reason is when I stop one semester to go back to Australia. 

    The last 2 exam wasn't tough but aiming to get grade A is very tough, "Human Resource Management" and "Organization Behaviour" 2 subject only but reading and memorize is not my thing. I pray God will guide his way through me, I also pray I able to continue degree somewhere in Australia with different course, I don't feel like doing Business anymore. I want something which more practical in learning rather than just reading from books. I aiming my way there ^^ (let you guys know if I ever made it somehow)

    I used to imagine the graduation of diploma will happens, now It is happening but wasn't exactly same as my imagination. One thing for sure, I am gonna miss this place(not because of college,honestly) but this place is where I met friends, hang out, up and low with all my friends and lecturer. Bad things happens, but most of it are great things. This place I regretted some, but benefit from it too. Friends it is the hardest to let go, but everyone has to move on sometimes, I sure am going to feel sad to leave them here. Thinking about next time when I meeting them will be very surprising, maybe marry? kids? job? boyfriend? girlfriend? other unexpected thingy haha. I eager to see what they will bring on them self in the future. I pray is all greats things, I love to see them doing what they love.

    But I have to say.. I am prepared for the next step; Yes I am fearful, yes I have doubt but I still got to move on. To all my friends!!(In College;lecturer and friends)  I am proud to say, I am glad to know you all :)

    PS: suddenly Miley Cyrus; The Climb was in my head. haha... (T.T) sob sob... I feel sad to let it go

    Melaka~laka~laka


    Was dragging my feet to this trip, I was too tired to go anywhere due to few days keep going out and spend less time at home was very tiring and costly. I wasn't into this trip at all, but promise is a promise. That I make it my last trip with the gang ^^

    Khang Lin text me in 6am in the morning to ask if i am awake, I replied," I feel like crying d... I am soo tired..." haha nevertheless I was stressing myself for a cold shower and the honk was heard, Jeff and Khang lin was here,hopped on the car with Wilson, and stop complaining I thought to myself. Reached Kim'z home, and as usual we have to waited for her -.- ish.....


    The journey was 2 hours of driving with Jeff's Honda, Tol and Petrol cost about Rm100 then divided by 5 person. I am so glad to have a friend like Jeff willingly drive us up for a trip. Reached there about 10am just on time for breakfast at a famous Hainan Chicken rice shop, ok la.... not as good as I expected to be with its reputation.

    Explore the land melaka kingdom now, now is full of stall, food, and Interesting Arts gallery with interesting design. I got a nice necklace which only Rm8, I really have to thanks wilson for that. After a long walk, I felt my jeans in a state of suana, i cannot take it! The weather was too hot. So what happen is... we went into a fashion house! And I bought 1 tight BabyMilo shirt with a Sexy Hawaiian pants haha.



    We went for a walk again and I rushing for a nature call, and found a public toilet was sooo clean. Unexpected, Klang is sooo another world haha. Anyway We had a chill out from the sun at The Gallery for coconut drink(suit my new appearance) and for another sunny walk to find the famous,"Nyonya Restaurant" it is a bit Pricey, we just looking at outside with no least interest, the staff/manager just shut the door and said," Now we are close" What a RUDE! Ish... I won't recommend anyone for discrimination and rude service to others. So we again take another LONG SUNNY walk to find the Popiah and found a few nice thing to eat. One is the Kuih, which really nice. And Durian puff with also Durian Ice cream.



    The popiah is a long long queue.... We waited for 45 minutes, but it is worth! Nice, big and tasty! just a bit oily. And the last trip is to the famous SATAY CELUP! Thanks goodness we reach before 5pm, just nice for a table. It doesn't took long for another long queue for others. The day trip is indeed worth it, just the hot sun gave us a bit sunburn to Jeff and dark skin to all of us

    White Stray Doggy


    There is a white doggy which I called, " Doggy" haha.. and her husband the "Blacky" They are both a compatible couples that always linger around the neighborhood  as it is their territory. A pair of stray dogs which no one really bother them much. It is sad actually, they always search for  food and water. No much people in this neighborhood pay attention to them. Except me,Wilson and a few others. 

    I cannot do much for them or feed them because it is not home of mine. Everyone morning this pair of dogs will be sleeping under my car to get cover from the sun. I guess they choose my car because I don't hit them or chase them away, which other do. I remember one day, I thought I lost my Ipod when I went college, I was really so mad and down thought to myself that someone have stole it from me. MAD I am, when I reached home and park my car at parking spot along with Wilson. The dog just look at me and him, in a very funny looks in Doggy eyes, as she was wanted to tell us 
    something, as she looking at us and on the grass near my car. And It was there! My IPOD! the white doggy save it! It save my whole music collection! and 1k ipod!

    And Today, I suppose to be at college at 10am for my OB test, guess what happened, Doggy gave birth to 2 cute little puppies under my CAR! I sms my friend Jasmine to tell Mr.Kunu that I will be late due to "puppies under my car, I cannot move" haha he said lame excuses until i show him prove. It is such a amazing thing happen, I wasn't angry at all, I glad 2 beautiful puppies are born from it.




    Female dogs usually bad mood and feel threaten if anyone approach the its puppies, but Doggy doesn't do that to me or Wilson. Even when we try to remove the dogs from my car tire track, it just stood near us and beg us not to hurt it with the whining sound. I felt a connection with this doggy, I felt I made a friend, she seem to trust me, and I am really glad. To repay when she found my lost ipod and she just gave birth. I bought 3 cans of dog food for her, I wanted her to stay healthy for her and the puppies ^^

    Sloppy Joes


    Introduction:

    Sloppy Joes is an American Dish, I get to know this from a movie show called " It takes 2" acted by the Olsen Twins. Me and My brother got to eat them for the first time is at a restaurant located in Klang, was brought by my sister. And It was really DELICIOUS!! But it was close down very fast. Can't never forget the name, "sloppy joes~ Sloppy Joes" but me and my brother called it, "Slappy" instead haha.. influenced by children mind. And I finally found one recipe that is quite close with my ideas of it ^^ just I change from beef to mutton.

    Trust me, this is really a different thing ^^

    Ingredient:

    500g Minced Mutton/Beef
    2 tbsp of chopped garlic
    1 whole chopped onion
    1tbsp Mustard
    1tbsp Tomato ketchup
    1tbsp Tomato Paste
    2tsp Brown Sugar
    1tsp Steak Seasoning
    1 Worcestershire Sauce
    3tbsp water

    Salt and Pepper for tasting



    (optional) Cheddar cheese to cook or serve with it
    (optional) chili flake
    (optional) Burger Buns/croissant/bread slices to serve it ^^

    Method:
    1. Fry the garlic and onion until fragrant, then pour over the minced meat. Drain the excess oil
    2. Add mustard,ketchup,tomato paste, Worcestershire together and stir it with medium heat
    3. Add sugar and water and let it simmer until less moist in a low heat. Then serve! ^^

    Turned into a kiasu



    I found myself turn into a "Kiasu" "Kiasu= A hokkien words for someone who are afraid of lose, whether in self and others, Fear of losing" nowadays.. maybe because of desperation and time is limited. My time in Malaysia is less then 35days, starting counts from today. When i look at myself, there a lot of things i still haven't do and also mastered on them. Another thing is age, I am 23 years old now, and regretfully I am still in diploma. I have wasted enough time in college, so I mustn't waste any more precious time.

    I had put down a list to myself on the last post. A few things i must mastered on them, weather it is a hobbies or a education. Lets say piano, I having a really hard time practicing piano by my own with no guidance and motivation. And workout, I did put myself in gym more often than before because it is my last month in gym, what for paying yourself into gym if you doesn't want to see result. So I also kinder jealous of all the well toned and fit guys, always wish to become like them haha. I must get FIT!! with no fats and well build body shape. Well I just being honest. My photography also now hang in the middle, I only use it once a a while.

    But there something i must said of being proud on one thing, which i love doing. Cooking! I being learning a lot from past few months, especially in baking. I am blessed to have a friend like Wilson, his mother and the family. They treated me like part of the family. Wilson always helping me with cooking and we learn together and teach each other. His mother taught us both how to bake, yea just by looking a the few cakes I did before. She is expert in baking, so I considered her as my mentor in kitchen haha.

    I am a guy will not sit down and do nothing. I am a human made by God hands. I believe myself are created in a purpose and God put interest in my life for some reason. Ever since young, I never stop learning and asking question when I am curious. I love to teach others what I know, because "I am blessed to be bless"
    most of all, Life it is a journey of preparation for the end. I always encourage others to do what they love to do.

    Honey Grill Lamb Chop




    Introduction:

    It is been long time since i created my own recipe, of course with the helps of few extra ingredient example like the steak powder but the rest i think of it myself and a guide from previous recipe I made. So this is what i came up with, a taste is almost similar with the Tesco style selling at the market

    Ingredient:
    4 Lamb Chop
    2 tbsp Worcestershire sauce
    1 tbsp Olive Oil
    2 tbsp Oyster Sauce
    2 tbsp Honey
    2 tbsp Black Pepper Sauce
    2 tsp Sugar
    1 tsp Dried Oregano leaves
    1 tsp Dried Rosemary leaves
    2 tsp Steak seasoning powder(optional)
    1 tsp Dried Mix herd (optional)
    pinch of salt and pepper

    Method:
    1.Marinate it all together in bowl and remember to massage the lamb to get the muscle soak with all the marinade sauce. Keep in fridge for 6 hours
    2. There are 2 ways of cooking it, either grill it in a hot pan until the meat is tender about 10-15mins
    ( or oven for 20-25min for 180'C)

    Pet exhibition 2010


    I went twice for Pet Exhibition 2010, This event is an amazing event, i got to know this last year from my female best friend Nesh, she was one of the organizer last year too bad this year she wasn't joining, so i cannot get free entrance haha. Anyway this year is really great! I got to know a lot of pet lovers and actually have quite a chat about them. 
                                                          Both is the Milk snake ^^


    When I was walking around, I can't stop taking picture of all the animal that walk passed by, worse when I saw a Golden Retriever and Siberian Husky, i can just stop there a gaze upon them for as long as it is there. And the second best time i had was with the Gecko Company, they have MILK SNAKE!! one of my favorite snake, because it is not venomous but it imitate the one of the world top venomous snake the Coral snake. How to differentiate? the owner taught me this, "Red with yellow kill a fellow" so if not red+yellow from side to side = Milk snake; Isn't cool? I will get one milk snake in the future for sure! I got to play with it and carry it with me. But one danger part was when i was holding it, a playful children boy was touching it and hitting it haha, and i quickly get the snake from that boy.

    Best moment and sad too was when a dog for adoption, A dog slept in my arms when i was carrying it. This dog was weak and tired, not active at all. Because she had no love and was suffering from a minor unwell. This dog was came to this organization of pet finder, i sure it wasn't a lucky dog before they found her. The lady kept asking me to adopt it, since i love her so much, yea i was though the same, this dog should be with a loving family. My heart felt so warm and soften when the gaze of her cute puppy eye begging for love. I really and from all bottom of my heart; I wanna take her home. But situation stopped me from doing it, I leaving Malaysia in one month time. 

    I pray every family should have adopt one dog, and treat it with loves, a dog is not slave. God create it and others for a reason. For those who have read this, please adopt her for me which i cannot do so for now. Please visit www.PetFinder.my to be its father and mother and for other doggy

    Shepherd Pie: Method 1



    Introduction:

    haha Shepherd pie suppose to be easier than lagsana but i have to bake 2 times to make it taste better. I still cannot get the taste i got from "Starbucks" but nevertheless i will still wanna beat it one day ^^ wish me best

    Ingredient:
    500g Chicken Meat (cut into cubes)
    150g Ham/sausages (cut into smaller pieces)
    150g Sweet Corn/mix vegetable
    1 can Mushroom
    2 tbsp butter
    3 tbsp plain flour
    1 1/3 Milk
    1 1/3 Chicken stock
    1 tbsp Dijon mustard
    1 tsp  thyme,parsley,rosemary
    Cheddar cheese (option)
    salt and black for tasting

    Topping:
    Mashed Potato (recipe) or
    1 sheet-rolled frozen puff pastry + 1 egg beaten to glaze

    Method:
    1. Melt the butter in a pan, stir in the flour, the stir for 1-2 minutes until smooth
    2. Gradually add milk and stock and stirring it constantly, bring to boil and smimmer
    3. Add mustard and meat(chicken &hams&corn) and add all herds for seasoning
    4. Stir it, if mixture too thick add in milk
    5.Put filling into a mould with Mashed potato or pie(refer below)
    6.Preheat at 170'C and bake for 25min

    for pie:
    Cut out a pastry lid to fit a 1lt/1qt pie dish, plus a strip to fit around the rim
    Stick: the strip onto the rim of the dish with water, then spoon in the filling. Place the pastry lid on top, using a pie funnel to lift it above the filling - or make a slit in the center of the lid. Press the lid down firmly around the edge of the poe to seal. Brush with the egg and cook for 25minutes or until golden

    German Chocolate Pecans Cake



    Introduction:

    Well... it started when I let my sister try on our(me and Wilson) Durian cake which we just learned, we had make it 3 times because the demand of if is tooo much haha. And once she tried it, she make a immediate order for her birthday next week, she demanded a Pecans or Macadamia chocolate cake. When I research on it, i found a German recipe which called "Chocolate Pecans Cake" and no one i know have made it before, so i did have a trial and brought to all my college friends to try. Most of them love it!

    This recipe is kind of sweet, for people who don't like sweet, this wasn't ideal but I kind of like it ^^ is less sweet than icing cake. And eat it while cold with coffee, is a enjoyment of life ^^

    Ingredient:

    110g   Chocolate Bar
    115g   Boiling water
    250g   Butter
    350g   Sugar
    570g   Cake Flour
    230g   Milk
    4         Egg Yolk
    4         Egg White
    1tsp    Vanilla
    1tsp    Tartar Cream
    1/2tsp Salt
    1tsp    Baking soda

    Method:
    1. Melt the chocolate with the boiling water and leave it cool aside
    2. Mix the sugar with butter at a mixer for few minutes until fluffy
    3. Add Egg yolk into the mixer and blend well
    4. Add melted chocolate and vanilla essense into the mixer
    5. Add stiffed flour, baking soda and salt into the mixer
    6. Add milk and beat it till everything blend while, only takes few minutes
                     {Separated it or leave the batter aside}
    7. Beat Egg white with tartar with high speed, when done, the will have stiff peak
    8. Now add at once the egg white done into the batter, mix it with spatula gently
    9. Cut wax paper into the baking mould so it won't stick and pour batter into it
    10. Bake at 190'C for 45min (Done if poke with tooth pick without goey)
          if still goey goes into the oven again for 5-15mins.
          Let it cool upside down with a rack
         (Don't open the oven while baking, it will make it fail in the middle)
    11. When cool cut into halves for middle frosting and topping frosting later

    Frosting(Topping)

    Ingredient:
    1cup        Evaporated milk/creamer
    1cup        Sugar
    3              Eggs yolk
    115g        Butter
    1tsp         Vanilla
    1 1/3cup  Coconut flake
    1 Cup      Chopped Pecans(roasted)


    method:
    1. Mix Evaporated milk, sugar, egg yolk, butter and vanilla with medium heat for 12min
    2. Add Coconut flake and Pecans into the mix and let it cool
    3. Put the frosting in between and above the cake
    4. Keep it into the freezer until ready to serve ^^ 2-3 hours will be best

    Pizza Dough



    Introduction:

    This pizza dough is for about make about 5 medium pizza, with the topping of your choice. Use own creativity to make a wonderful tasty pizza. I really have to thanks Wilson's mother for teaching me this, since 8 years ago i believe, i been finding a way to learn this.

    Ingredient:

    500g High Protein Flour
    10g   Instant Yeast
    10g   Sugar
    10g   Salt
    25g   Butter
    330g Cold Water
    15g   Milk Powder
    5g    Dough-con -- ACE MB (Ammonia)
    Total: 905g

    Method:
    1. Put high protein flour and instant yeast in mixing bowl on slow speed for 30sec (S shaped beater)
    2.Add in dough-con, salt, sugar, milk powder, and cold water & combine evenly until mixture resembles coarse meal
    3. Add in butter and knead the dough until 5-6mins until dough is elastic
    4. ferment for 1/2 hour covered with plastic
    5. Then scaling each dough 150gm mould like a ball and allow intermediate on a aluminum foil
    6. Press and pin out to a diameter of about 8" use flour to help make it easier to knead
    7. Prick dough with fork to prevent bulging and leave it proof for 25mins
    8. Bake the empty pizza dough at 210'C for 8-10mins (can keep it over night til serve)
    9. When harder, spread paste evenly over the pizza base and add topping ingredient of your choice
    10. Bake at 210'C for 15-20min to serve

    Durian Cake



    Introduction:

    This durian cake is modify from Cappucino cake which i posted not long ago, Wilson's mother ask us to change it just a bit to become Durian Cake ^^ I gonna try it after i go Australia, i bet i won't have the chances unless Aussie people eat them and Aussie trader import them into the country.

    As you can see, the cappuccino cake is this recipe, it is the same, i just change a bit and a lot of the mousse ingredient, this is the part you need to pay more attention now

    Ingredient(A)
    120g         High Ratio Flour
    3/4 tsp      Baking Powder
    5g             Milk Powder
    80g           Corn Oil
    6(110g)    Egg Yolk
    80g           Water
    10g           Glycerine
    1tsp          Vanila Essence

    Ingredient(B)
    3(130g)   Egg White
    120         Castor Sugar
    1/4 tsp     Cream of Tartar

    Method: (Same as cappucino or sponge cake technique)

    1. Mix ingredient(A) until the batter is uniform, (Hand beat)
         - put flour and baking powder in a mixing bowl.     
        -Mix milk powder with water first   
        -put oil, egg yolk, milk water and vanila in the middle of the bowl    
         - Start with the middle first then only side flour, stir with only one direction
         - and set it aside
    2. (B)whisk egg white and cream of tartar on high-speed until it start to foam
    3. Add sugar and continue to whisk on high speed
    4. Reduce to medium speed for 2-3 minutes until a stiff peak consistency
    5. Transfer meringue(B) into the batter and mix lightly and evenly with a spatula
    6. bake at 180'C for 45 minutes.
    7. Turn upside down to let it cool, to maintain a nice shape (better if with the mould that can be separate)
     

    Ingredient for Mousse:
    100-150g     Durian Puree    
    40g      Sugar
    15g      Gelatine
    60ml    water

    (A- Mix Puree and sugar)
    (B- Mix Gelatine and water to dissolved it)

    110g or 165g    Whipped Cream
    40g   or 60g     Cold Water

     Method:
    1. Double boil the ingredient above and keep it cooling aside before use later
    2. Whip the cream until cream, fluffy and smooth (don't over beat it, get thicker than smooth)
    3. Mix the Durian puree and whipped cream well together with a spatula
    4. Keep in fridge for an hour 
    5. Spread it between layers of cake 

    Topping: Just 250g topping cream, whip it til smooth and decorate with the cake

    Aquaria KLCC visit



    We had a visit to Aquaria Klcc finally after years since it was open, i remembered I got the "Opening Notice" when Aquaria open that time, I was giving my thanks to the lord, finally i have a chance to visit underwater aquarium, that was my dream since i was just a kid. After years, none or only few of my friend is interested to fishes and animal as i am, for 4 years i asking around who wanna go, no one give me a "yes" as answer. At 2008, I planned to go myself without any friends, just my camera and notebooks will do. I enjoy taking picture, writing down interesting notes and stare them in hope that something will happen.


    The day started by last minute planning, when i just asked Wilson," hey, tmr go aquaria, since we no class at monday"and by telling Edmund also give him sudden shock haha.

    It was raining day when 3 of us going KL by KTM(train station) and arrive at Aquaria at 4pm, paid the entry fee with only Rm25 with student card. And I miss all the feeding time!! Once i enter the aquaria, the first thing i did is go bother the small shark in the pond, along with horse-shoe crab and sea cucumber. I touch the Shark and it feel sand paper.


    I was snapping photo ever since i walked in, and talking with the brothers about animal and enjoy finding more interesting animal with interesting behavior. Aquaria is not only consist of fishes but also land animal. I indeed love animal, I believe them as God creation and God said to Adam that we are the lord over the creature. Well some people which i really lost respect for them, said that and i quote," God created animal without soul and we shall not pay attention to them, we must only pay attention to human to bring them for salvation" My opinion is "yes you may be right about they are without soul but we are human the lord over the animal should not take this is as advantage"

    My thoughts about today trip have reminded me, it we stay on without doing anything at all, just in 10 more years, life will die out in our world even before the judgment day. All the fishes is are soo cute and some are fierce as the sand tiger shark. Moon jelly fish is soo beautiful and gracefully as they swim. Even the poison snake and other creature are nice to see, of how unique they were created.

    I am satisfy with all that i see today ^^ I expected more because i really hope i can see the whole world in this small place but i know it is impossible. I encourage parents bring their children there, just let them hang out at the place as long as possible, children are curious, this visit might bring them good.
