Banana Cream Caramel Pie a.k.a Banofee Pie




I never heard of this pie until I came to Adelaide, It was simply marvelous pie ever! Simple and best, that how I love it. "One bite that make me forget my name" my friend stated haha.

Ingredient:

BASE:
250g - Marie Cookie/digestive (crushed)
150g - Melted Butter
About 400-500g Bananas (slices)

FILING: 
1 x 395g  - Tin sweetened condensed Milk
75g          - Butter
1/2cup     - Brown sugar
2tbsp       -  Golden syrup

Cream:
600ml     - Thickened Cream
1tbsp      - Icing Sugar
few drops Vanilla essence
Chocolate for decor


Method:
1. BASE - Crushed cookie and combine with melted butter in 23cm(9inc) pie base pan, put in refrigerator
2.FILLING - Put butter in a sauce pan, and then put brown sugar, keep stirring until sugar melted
3. Pour condensed milk and golden syrup, and in medium heat and keep stirring for about 10min (until it turn caramel colour), until thick and set aside to be cool
4. Slices the bananas into round slices, and place on cookie base, pour over caramel and make sure all cover with caramel.
5. Beat the cream until stiff peak, and cover the caramel.
6. Decorate with chocolate with creativity or grated
7. Put in refrigerator and serve it cold

Chilled Cheese Cake



My favorite all time cheese cake. I love it ever since I had my first cheesecake ever and my sister homemade cheese cake to! Well since this is my favorite, and I always wanna make something this delicious, if i recall, this is my first cake ever! and yea.. not baking it ^^ but cooling it

ingredient:
150g  Maria biscuits
120g  Melted Butter

(A)
2   egg yolks
150g  sugar
160g  milk

(B)
2 1/2 tbsp gelatin
100ml Boiling water
1/2 tbsp Lemon juice

(C)
250g Cream Cheese
250g Double Cream

Method:
1. Combine crushed biscuit into tiny crumbs and melted butter into base of 9inc loose pan base
     and chilled it into the freezer
2. Beat (C) cream cheese until smooth and pour the cream into it until smooth
3. Stir in (A) into the mixer for few minutes
4. Stir in (B) into the batter and beat it for only a while until well blend
5. Pour over into the pan and keep it in fridge for 5 hours or over night
(optional to put some berries or fruits, but need adjust some sugar, Example: raspberry is sour, so put more sugar)

Red Velvet Cake a.k.a "Devil Food Cake"




Ingredient:
250g( 2 1/2 cups)     - Cake Flour
1/2 tsp                      -  Salt
15g (2tbsp)               - Cocoa powder
115g (1/2cup)           - Unsalted Butter
300g (1 1/2cup)        - Caster Sugar
2                               - Large Egg
1tsp                           - Vanilla Extract
240ml(1cup)              - Buttermilk
2tbsp                         - Red Co-louring
1tsp                           - White distiled vinegar
1tsp                           - Baking Soda

Cream Cheese Frosting
250g                        - Cream Cheese
250g                        - Mascarpone cheese
1tsp                         - Vanilla Extract
115g(1cup)              - Icing Sugar
360ml (1 1/2cup)     - Whipping Cream

Method:
1. Sifted Flour, salt and cocoa powder in a bowl
2. Beat butter until soft and add in sugar(until creamy white), add in eggs(one at a time), add vanilla
3. Add flour into butter mixture, separated into 3 portion
4. IN SEPARATE A= Mix butter milk and R.Colour, B=Soda and vinegar(It will fizz and quickly pour into mixture). Pour butter milk into mixture too
5. After a good blended mixture, divided into 2 9Inc cake mould, and cooked in preheated 175'C, for 30min
6. After done, cool it with cake wire and wrap it with plastic wrapper, place in refrigerator at least an hour or overnight. (This is done to make filling and frosting the cakes easier.)
7. (optional cut into 4 layers or 2)

Cream Cheese:
1. Beat Cream cheese first and add in mascarpone cheese until smooth, add vanilla
2. Add in Icing and gradually add cream, whip until frosting is thick enough to spread
(Add more sugar/cream to get right condensity)

Notes:
Buttermilk can be substitude by making
<2tbsp (lemon juice/vineger) to 1 cup of Milk>
OR <2tsp Cream of tartar to 1 cup of milk>

For Mother with Love~



Yesterdays was my mother's birthday, she called me up and

she said:        "hey~~ It is my birthday and you didn't call me"
David:           "mum~... of course I know it is your birthday,I didn't call because you are still working"
She said:       "Anyway~ did you bake a cake for me??
David:           "Of course~~ I did" (very sarcastically) [But in reality I haven't even bake it]

Scene 1 -When at restaurant, after showing her the cake-

Mother:         "Waa... soo nice ah?
David:           " Of cuz la~ You my mother and I make my best for ya"
Mother:         *Smile :-)

Scene 2 - When we eating and she bragging - LOL


Mother:       " You know ah.. this cake is made by my son, he "bla bla bla(bragging about me)
Friend 1:     "waaa... waaaa" Amazement +compliment + good comments"
Mother:       " he ah.. love to bake, and all very nice~~"
  [basically my mother won't compliment me in-front but to others  :-) -typical Chinese way]

Scene 3 - WHen she love me and love me not~ :-P
Mother:       "Aiyo~ why you hair got hole here and there?"
David:         " these are not hole, it is layer and fashion"
Mother:       "aiya~~ sooo ugly, U should cut like this, like gangsters"

My September 2011, hairstyle 

PS: My mother love my cake not my hairstyle :-(




I was thinking it is my assignment due tomorrow and I haven't complete it yet :(
and I am out of ideas what to bake, have to shop, have to clean, do this, do that.

and I thought to myself, "HEY DAVID! SHE IS YOUR MOTHER FOR GOODNESS SAKE"
haha so.. I drag myself to grocery in yesterday Sunday afternoon, bought some grocery, while thinking
what to bake. In the mean time, i recall my sister Angeline asked me try to bake this particular cake, called "Red Velvet Cake" sound like a flower flavor cake to me, I actually thought it is; It is also know as "Devil Food Cake" wow~~ sound deadly yet yummy. Sinful taste :P yum yum~~

Anyway, long story short, I spend my night baking this newly learned recipe, and give it a go. Pouring all my sweat into this cake, baking it, study it. PROTECTING IT haha..
I have felt a bit jumpy, fear of anything might destroy the cake. I actually called a taxi to pick me up to the restaurant, that is a money i will to pay for security of transporting my cake to my mother safety, when arrived at restaurant, i didn't even allow the waiter to touch it, i have bring the cake myself with the stairs haha.

The Cake, I actually have a stress while making it, neglecting my gym time and risking my assignment, few hours before it due. Decorating cake was not an easy task, I actually shouting help from my friend Valerie(Taiwanese, artist, besties), I taught her how to cook, usually she show me how to decorate with her creativity. Anyway.. I destroyed the first design in my mind, without enough cream and cake's left over bits. I glad i didn't give up and still thinking nothing and let holy spirit guide haha. THank God :)

My first design is, only red and white. But I ended up using chocolate to cover the ugly spot but it turns out beautiful :)

Moist Chocolate Cake


One of the most amazing chocolate desert I know, it is the chocolate moist cake, amazing, it is moist inside and with the deep chocolate fudge covering the middle and whole cake, simply marvelous. It is a challenge but it is worth

Ingredient:
(sift 3 times)
220g      Cake flour (200g plain+20g corn flour
50g        Cocoa powder
1tsp       Baking powder
1/2tsp    Baking soda
1/4tsp    Salt

190g          Butter
330g          caster sugar
1 1/2tsp      vanilla essence
3                Eggs(size A)
250ml        Cold Water

Method:
1. Cream the butter and sugar in the mixer until creamy white, add one egg at a time, put vanilla.
2. Add in all dry sifted ingredient(separated 3 portion, one at a time), and lastly put cold water.
3. Pour into 9inch cake pan, with baking paper/light greased
4. put into 180'C preheated oven for 45-50min

Fudge:
600g Dark chocolate
50g   Glucose syrup/sugar
300g Cream
100g Butter

Method:
1. In double boil, add glucose, butter, cream to melt.
2. Add in chocolate to melt, keep stirring
3. Cool it down in room temperature until firm and able to shape.
