Orange Cake; Simple and nice



I found a few recipe online but the I still would recommend the recipe from Town of Renmark, Australia. Believe it or not, this recipe was by tough country man Paul Hansen. One more interesting face is Renmark have introduce men's only cake competition. Maybe.. I should sign up haha.


Recipe:

85g        Butter
3           Eggs
1 1/4 C   SR flour, sifted
1/2 C      Castor Sugar
90ml     Orange juice (fresh is good!)
Grated rind of one orange


Method:
1. 180'C preheated Oven, use 20cm round cake pan and line the base
2. Golden rules: first butter, then sugar, then egg, then flour, then oranges juice
     (if  you don't really understand the Golden rules of it, just comment or contact me, I will tell u)
3. Bake about 30-40 min, until Golden Brown and firm when touch.
4. Optional: Orange Icing topping when serve


Tips: too much oranges juice (Acid) would make the cake collapse

Red Velvet Cake a.k.a "Devil Food Cake"




Ingredient:
250g( 2 1/2 cups)     - Cake Flour
1/2 tsp                      -  Salt
15g (2tbsp)               - Cocoa powder
115g (1/2cup)           - Unsalted Butter
300g (1 1/2cup)        - Caster Sugar
2                               - Large Egg
1tsp                           - Vanilla Extract
240ml(1cup)              - Buttermilk
2tbsp                         - Red Co-louring
1tsp                           - White distiled vinegar
1tsp                           - Baking Soda

Cream Cheese Frosting
250g                        - Cream Cheese
250g                        - Mascarpone cheese
1tsp                         - Vanilla Extract
115g(1cup)              - Icing Sugar
360ml (1 1/2cup)     - Whipping Cream

Method:
1. Sifted Flour, salt and cocoa powder in a bowl
2. Beat butter until soft and add in sugar(until creamy white), add in eggs(one at a time), add vanilla
3. Add flour into butter mixture, separated into 3 portion
4. IN SEPARATE A= Mix butter milk and R.Colour, B=Soda and vinegar(It will fizz and quickly pour into mixture). Pour butter milk into mixture too
5. After a good blended mixture, divided into 2 9Inc cake mould, and cooked in preheated 175'C, for 30min
6. After done, cool it with cake wire and wrap it with plastic wrapper, place in refrigerator at least an hour or overnight. (This is done to make filling and frosting the cakes easier.)
7. (optional cut into 4 layers or 2)

Cream Cheese:
1. Beat Cream cheese first and add in mascarpone cheese until smooth, add vanilla
2. Add in Icing and gradually add cream, whip until frosting is thick enough to spread
(Add more sugar/cream to get right condensity)

Notes:
Buttermilk can be substitude by making
<2tbsp (lemon juice/vineger) to 1 cup of Milk>
OR <2tsp Cream of tartar to 1 cup of milk>

For Mother with Love~



Yesterdays was my mother's birthday, she called me up and

she said:        "hey~~ It is my birthday and you didn't call me"
David:           "mum~... of course I know it is your birthday,I didn't call because you are still working"
She said:       "Anyway~ did you bake a cake for me??
David:           "Of course~~ I did" (very sarcastically) [But in reality I haven't even bake it]

Scene 1 -When at restaurant, after showing her the cake-

Mother:         "Waa... soo nice ah?
David:           " Of cuz la~ You my mother and I make my best for ya"
Mother:         *Smile :-)

Scene 2 - When we eating and she bragging - LOL


Mother:       " You know ah.. this cake is made by my son, he "bla bla bla(bragging about me)
Friend 1:     "waaa... waaaa" Amazement +compliment + good comments"
Mother:       " he ah.. love to bake, and all very nice~~"
  [basically my mother won't compliment me in-front but to others  :-) -typical Chinese way]

Scene 3 - WHen she love me and love me not~ :-P
Mother:       "Aiyo~ why you hair got hole here and there?"
David:         " these are not hole, it is layer and fashion"
Mother:       "aiya~~ sooo ugly, U should cut like this, like gangsters"
David >>>>>>>         [=.=]" -  speechless but LOL

PS: My mother love my cake not my hairstyle :-(




I was thinking it is my assignment due tomorrow and I haven't complete it yet :(
and I am out of ideas what to bake, have to shop, have to clean, do this, do that.

and I thought to myself, "HEY DAVID! SHE IS YOUR MOTHER FOR GOODNESS SAKE"
haha so.. I drag myself to grocery in yesterday Sunday afternoon, bought some grocery, while thinking
what to bake. In the mean time, i recall my sister Angeline asked me try to bake this particular cake, called "Red Velvet Cake" sound like a flower flavor cake to me, I actually thought it is; It is also know as "Devil Food Cake" wow~~ sound deadly yet yummy. Sinful taste :P yum yum~~

Anyway, long story short, I spend my night baking this newly learned recipe, and give it a go. Pouring all my sweat into this cake, baking it, study it. PROTECTING IT haha..
I have felt a bit jumpy, fear of anything might destroy the cake. I actually called a taxi to pick me up to the restaurant, that is a money i will to pay for security of transporting my cake to my mother safety, when arrived at restaurant, i didn't even allow the waiter to touch it, i have bring the cake myself with the stairs haha.

The Cake, I actually have a stress while making it, neglecting my gym time and risking my assignment, few hours before it due. Decorating cake was not an easy task, I actually shouting help from my friend Valerie(Taiwanese, artist, besties), I taught her how to cook, usually she show me how to decorate with her creativity. Anyway.. I destroyed the first design in my mind, without enough cream and cake's left over bits. I glad i didn't give up and still thinking nothing and let holy spirit guide haha. THank God :)

My first design is, only red and white. But I ended up using chocolate to cover the ugly spot but it turns out beautiful :)

German Chocolate Pecans Cake



Introduction:

Well... it started when I let my sister try on our(me and Wilson) Durian cake which we just learned, we had make it 3 times because the demand of if is tooo much haha. And once she tried it, she make a immediate order for her birthday next week, she demanded a Pecans or Macadamia chocolate cake. When I research on it, i found a German recipe which called "Chocolate Pecans Cake" and no one i know have made it before, so i did have a trial and brought to all my college friends to try. Most of them love it!

This recipe is kind of sweet, for people who don't like sweet, this wasn't ideal but I kind of like it ^^ is less sweet than icing cake. And eat it while cold with coffee, is a enjoyment of life ^^

Ingredient:

110g   Chocolate Bar
115g   Boiling water
250g   Butter
350g   Sugar
570g   Cake Flour
230g   Milk
4         Egg Yolk
4         Egg White
1tsp    Vanilla
1tsp    Tartar Cream
1/2tsp Salt
1tsp    Baking soda

Method:
1. Melt the chocolate with the boiling water and leave it cool aside
2. Mix the sugar with butter at a mixer for few minutes until fluffy
3. Add Egg yolk into the mixer and blend well
4. Add melted chocolate and vanilla essense into the mixer
5. Add stiffed flour, baking soda and salt into the mixer
6. Add milk and beat it till everything blend while, only takes few minutes
                 {Separated it or leave the batter aside}
7. Beat Egg white with tartar with high speed, when done, the will have stiff peak
8. Now add at once the egg white done into the batter, mix it with spatula gently
9. Cut wax paper into the baking mould so it won't stick and pour batter into it
10. Bake at 190'C for 45min (Done if poke with tooth pick without goey)
      if still goey goes into the oven again for 5-15mins.
      Let it cool upside down with a rack
     (Don't open the oven while baking, it will make it fail in the middle)
11. When cool cut into halves for middle frosting and topping frosting later

Frosting(Topping)

Ingredient:
1cup        Evaporated milk/creamer
1cup        Sugar
3              Eggs yolk
115g        Butter
1tsp         Vanilla
1 1/3cup  Coconut flake
1 Cup      Chopped Pecans(roasted)


method:
1. Mix Evaporated milk, sugar, egg yolk, butter and vanilla with medium heat for 12min
2. Add Coconut flake and Pecans into the mix and let it cool
3. Put the frosting in between and above the cake
4. Keep it into the freezer until ready to serve ^^ 2-3 hours will be best
