My very own recipe: Moist hamburger with apples



I learned how to make burgers patties which is moist and great balance in flavors, compliment to one another. This is simple one of the best burger I tasted that I made myself, and I am sharing this to you all. Don't let me catch you selling my recipe guys haha.


Ingredient:

500g Minced (chicken/turkey)
2tbsp worcestershire Sauce
1/2 Apples (diced)
2 cloves of Garlic (diced)
1/4 big onion (diced)
1tbsp Thyme leaves
1/2tbsp  Rosemary leaves
2tbsp Olive oil
Optional: salt & pepper


Method:
1. Mixed it all together well
2. Shape it as a patties before cook it in a medium heat with additional olive oil, for about 5 min
each side.
3. Serve with burger breads or bread of your choices.


Adobo~ A Filipino cuisine




Adobo is a simple home Filipino cuisine that was taught by my dear filo friend, I am surprise that this amazing tasty meal is so simple to make, for me personally it is a perfect balance of flavours, sweet and sour. Simplicity is the best :)


Ingredient:

1kg       Meat (pork/chicken)
1cup     White Vinegar
1cup     Soy Sauce
1/2cup  Sugar
1          chopped onion
2tbsp    Olive oil (depends how much fats it is in the meat)
5          bay leaves

Optional
1          sprig of rosemary

Method:
1. Optional: to fried onion and olive oil first. Or just put it all together in a pot, cook in boiling point temperature and then for 30-40 minutes in medium low heat.

Note:

  • Basically the liquid of vinegar and soy sauce suppose to be covered the meat or almost covered.
  • Add in flour at the final stage, if you want it to be thicken in sauces.

My Italian Month: (1) Italian Meatballs with tomato sauce

Meatball spaghetti bolognese

Breakfast meatball with pouches egg and cheese




Have to be honest, I started to love Italian meatball when I working in a Greek restaurant, I tried it once and I just love it, because it was sauteed with tomato sauce and best, with red wine. The first time I tried Meatball in Malaysia but it is nothing compared to the real thing. It is just beautiful.


Ingredient:

3/4 Cups(185ml) Olive Oil
1 Onion, finely chopped
2/3 Cups (100g), Pine Nuts
3 Garlic Cloves, Crushed
40g Parsley, roughly chopped
5g Basil or rosemary, roughly chopped
2 tsp fennel seeds, ground
2/3cups (55g) fresh breadcrumbs
1cups (25g) Ricotta cheese
1/4cups (25g) grated Parmesan cheese
grated zest of 1 large lemon
1 egg
1/4 cups red wine
500g minced (ground) beef or pork

Method:
1) Cook onion, pine nuts with olive oil until brown. Add garlic and cook few minutes more and set aside.
2) Combine herbs, fennel seeds, breadcrumbs, ricotta, parmesan, lemon zest and egg in a bowl with minced meat, add red wine.
3) Add cooked onions and pine nuts, season with salt and pepper and mix until ingredient combined
4)leave it to rest for 30min or overnight
5) Make meatball about 50g each (slightly flatten if fry)
6) CHOICE OF COOKING: fry until golden brown each side OR bake it at 200'C for 25min.
7) Served it with tomato sauces


Tomato sauce:
800g tomatoes (or 2 X 400g tins tomatoes)
1/2 Cups (125ml)
Optional: herbs- oregano, rosemary, basil and etc...

Method:
1) if fresh tomatoes, score a cross in top of each one, plunge them in boiling water for 20 second, then drain and peel the skin.
2) finely chopped the flesh
3) Add the tomatoes and wine to the saucepan, season with salt and pepper (other lovely herbs of choices) and simmer for 5 minutes.
4) Optional: pour over meatball or add meatball to sauce and cover and simmer further for 10 minutes.
5) leave 10minutes before serving.


Tips: When keeping in fridge, I cover meatball with tomato sauce, the next day taste awesome!!

Melaka~laka~laka


Was dragging my feet to this trip, I was too tired to go anywhere due to few days keep going out and spend less time at home was very tiring and costly. I wasn't into this trip at all, but promise is a promise. That I make it my last trip with the gang ^^

Khang Lin text me in 6am in the morning to ask if i am awake, I replied," I feel like crying d... I am soo tired..." haha nevertheless I was stressing myself for a cold shower and the honk was heard, Jeff and Khang lin was here,hopped on the car with Wilson, and stop complaining I thought to myself. Reached Kim'z home, and as usual we have to waited for her -.- ish.....


The journey was 2 hours of driving with Jeff's Honda, Tol and Petrol cost about Rm100 then divided by 5 person. I am so glad to have a friend like Jeff willingly drive us up for a trip. Reached there about 10am just on time for breakfast at a famous Hainan Chicken rice shop, ok la.... not as good as I expected to be with its reputation.

Explore the land melaka kingdom now, now is full of stall, food, and Interesting Arts gallery with interesting design. I got a nice necklace which only Rm8, I really have to thanks wilson for that. After a long walk, I felt my jeans in a state of suana, i cannot take it! The weather was too hot. So what happen is... we went into a fashion house! And I bought 1 tight BabyMilo shirt with a Sexy Hawaiian pants haha.



We went for a walk again and I rushing for a nature call, and found a public toilet was sooo clean. Unexpected, Klang is sooo another world haha. Anyway We had a chill out from the sun at The Gallery for coconut drink(suit my new appearance) and for another sunny walk to find the famous,"Nyonya Restaurant" it is a bit Pricey, we just looking at outside with no least interest, the staff/manager just shut the door and said," Now we are close" What a RUDE! Ish... I won't recommend anyone for discrimination and rude service to others. So we again take another LONG SUNNY walk to find the Popiah and found a few nice thing to eat. One is the Kuih, which really nice. And Durian puff with also Durian Ice cream.



The popiah is a long long queue.... We waited for 45 minutes, but it is worth! Nice, big and tasty! just a bit oily. And the last trip is to the famous SATAY CELUP! Thanks goodness we reach before 5pm, just nice for a table. It doesn't took long for another long queue for others. The day trip is indeed worth it, just the hot sun gave us a bit sunburn to Jeff and dark skin to all of us

Home-made Dim Sim



My mother taught me how to make a very nice dim sim without spending at outside, which really high cost, i only use about rm15 i can made about 100 piece of dim sim. This version of Dim Sim is consist of vegetable; The smell is smooth and nice. i know it is different but i tell you, I love my parents recipe better. If you eat outside in "Kopitiam" the smell is tooo meaty and if wanna eat a nice one, you have to spend a lot at Dim Sim restaurant.

Keep in mind that, because me and my parents have the sense of taste and agar-agar(roughly feeling) we hardly mearsure the quantity of ingredient we do. Anyway, I tried my best by explaning, first I will show you the ingredient.

INGREDIENT:

Meat(pork)/chieh bak : 2kg, mince
Salary                         : 4-6 stick (depending on size)
Carrot                        : 1-2          (depending on size)
Spring onion               : just a handful, finely chopped
Cabbage                    : just a handful, finely chopped
Garlic                         : handful ( I don't put cuz i don like lol)
Wanton/dimsim skin   : 1-2 packet

FYI = All must finely chopped in small piece, EXCEPT the dimsim skin, duh....

SEASONING:

Oyster Sauce         :  ?????? (because i roughly)
Soy Sauce             : put a lot
Sesame Oil            : ??????
Sugar                     :??????
Pepper                  : ?????
Flour                     : handfull

My way of doing it. I use hand to mix all the ingredient together and add all seasoning in together and keep stir around finely with your hand. Don't be afraid to taste your hand for the right amount of seasoning, i know is disgusting, but rather be brave than be sorry.

2. Nicely wrap the meat in the Dimsim skin and put on the plate(put abit oil on surface to keep from sticky) and steam it for 10-15min. And it is done!

Boxing!! box box punch punch

2oth of march

While i still sleeping, i kept dreaming how i gonna reject the boxing practice i promise to try. I dream about, yay.. i am late so i no need to go. Or Barry canceled his practice section. But the truth is, I was really DREAMING too much. So i did force myself wake up, quickly wash my face brush my teeth. And walk to Barry's house with my brother Caleb.

Whoah... The practice that by warm up, 3 abs exercise warm up. Then next Michel(Barry son) taught me how to punch, and IT WASN'T AS SIMPLE as everyone thought it should be. Both hands have to be above the eye for blocking and punch straight from the side. For right handler, use left. For left Handler use right. Barry said this is to train the weakness to be stronger as the other hands.

Barry and Michel train me,Caleb and Wayne that day. I met Cipa and Bonnie that day, Bonnie is the cute little girl who wanna train with us. Pull me aside to do rope skipping instead. Barry's family is a beautiful family. I respect them soo much.


After a few basic practice, i think i injured my left hand haha. Me and my brother go for a nice breakfast, I order "Toasted Wrap and Chocolate drink" my brother order a "Mix something haha" Come to think of it, Body combat is nothing compare to this training. Body combat is for cardio exercise, this is Battle training as battle machine haha. Ouch *hand still pain*

Korean Food!

I remembered at  10th of March, me, Wilson and Edmund(Wilson bro) went to Aeon Jusco for Korean food, the plan was though weeks before, and I made a promise to Edmund that I will bring him to, as a birthday present to him. And since i know he enjoy good food. Beside me and Wilson too enjoy to.



We choose the table which we can keep our legs visible to others haha. We ordered a whole lots of meal, 1 set of 3 and additional one rice for each. Which we though is reasonable and able to finish it. 
The waitress asked if we wanted to cook at the table or cook else where, and of course being a curious and fun gang, we wanted her to cook for us here and to be seem. Well she isn't friendly haha, and she should because we paying services tax. But we still gonna give a thumbs up to the cooking services she gave and it was delicious.

It was really sooo delicious ^^

well we really enjoy our time eating together,  but the lettuce with the grill chicken meat was really "geng" I love it. Taste beautiful, wish i can go again soon, even though is expensive but life have to be enjoy sometimes in a long long time haha.

Lasagna Version David



Hey hey.. I love cooking, cooking is like a creative arts for me, since i cannot draw or design. So I cook, mix the ingredient and poof!! you got a new taste haha.. Well I am not a chef, and don think so future i will be, even though i came from chef family background but cooking for me is a interests not a career :)

Remember I wrote on the post called " Not So Bad Monday"? that Monday i cooked lasagna and cabonara. So now i gonna list down the recipe, you can have my recipe since it is a blessing given to me, why not i bless my dear readers, cheers :)


Recipe For Lasagna V.David

  • Olive oil/ vegetable oil
  • 1 large onion, chopped
  • 250g/1 can of buttons mushrooms
  • 125g of ham, slices
  • 500g meat (chicken/bacon/beef/seafood)
  • 250g of cream cheesev
  • tomato paste for colouring and taste
  • 4-6 tbsp of milk
  • lasagna noodle
  • pecorino/cheddar / Parmesan cheese
  • and mozarella cheese
  • salt and pepper ( to taste)
white sauce
  • 40g butter
  • 40g flour/potato starch
  • 600ml milk
  • a bit of cheese
  • salt and pepper

How to make

  1. Heat the oil in a frying pan, fry onion and garlic for 3 minutes (moderate heat). Add mushroom and cook for 2 minutes; now add the meat and stir it.
  2. After few minutes add cream cheese and few tbsp of milk to make it moist. heat until the cheese melt. Season with salt, pepper. Add tomato paste to colour it to a bit red.
  3. when it done, put it aside
White sauce:

  1. melt the butter in a saucepan and stir in flour/starch. cook gently with low heat.
  2. Slowly whisk with milk, by pouring milk slowly
  3. Keep whisking all the time until thick and smooth.
  4. sprinkles some cheese and season it with salt and pepper.
Assemble the lasagna

  1. Usually I cooked 6 slices of lasagna noodles on one oven proof dish
  2. first layer, spread some white sauce below and then cover it with first later of lasagna
  3. put the cooked meat on top of the lasagna noodles and some cheese over it.
  4. On the last layer, cover the white sauce on top of the noodle and pour mozzarella cheese and other cheese.
  5. put in the oven about 220F for 20min-30min. or until brown
and it is done!! you can now have you own lasagna make by u! U! U! yourself. and duh.... even i didn't mention just now. You have to cook the lasagna noodle in a boiling water with salt and oil.

Shark-fin Soup No More




One interesting article I just read at Menhealth magazine. It is about Shark-fin!! one of my favorable topic to share with others :P be ready guys.

Article is called "Bad Bite" Now I briefly will note why say no to shark-fin soup that we Chinese adore much. In the nature of shark, they eats smaller fish with contain mercury. according to research, men who ate two portions of this a day were 70% more likely to get heart disease. The reason? sharks eats smaller fish that contains mercury but they are unable to break it down, so it builds up to dangerous level in their bodies. So we will get mercury level too when we eat shark, say no no no to shark yar?

Solution? have some salmon instead, these fishes eat mainly plankton and gave very low mercury levels. but yar.. i know... It is expensive!! just look at the sushi dishes haha.

Even it is not bad to health i really suggest don take shark-fin soup, you know how horrible it is? we human eat its, but doesn't care how fisherman kills them in order to satisfy our self selfish needs. Have a look at Google or youtube, you know what i mean.

Beside... have you notice? usually rich people have heart attack haha at movie, more than the less fortunate people. perhaps they ate too much. The moral of the story? luxury food aren't not the best choice :P

My beloved “butter Prawn” story

I love the sea food meal call "butter Prawn" it is amazing delicious and the way to cook and presentation is just beautiful. I first ate butter prawn if i remember well, it is from my grandma, she love us and she knows i love her butter prawn. So in every-time i will visit her and saying, " grandma! grandma! can i have prawn??" of course she will cook it for me, when she cooks , the aroma of the butter just fill the whole house. The best thing was it is cook only for me!! no one to share!! Muahahaha(evil laugh)
Well my grandma isn’t around anymore… i do miss her a lot . But she did leave me a mark that i will remember her forever, even i become a grandpa. She left me a "seafood allergic" ha-ha.. really maybe because i ate too much in the past, now if i take over a limited seafood, especially prawns. I tongue will feel itch. " I love you grandma!! I will always remenber you grandma and your butter prawns!!"
ps:
My dad cooks the best butter prawn now, other than my grandma. He even won the awards of the "curry prawn in claypot" in australia!! CHEF ROCKS!!
